cha cha cha...CHIA!!! Chia has quickly become one of my absolute favorite ingredients. According to Dr. Andrew Weil This little seed is so packed with nutrition it's ridiculous (also, here's where I geek out), it's complete protein, full of protein, fiber, omega-3 fatty acids, calcium, phosphorus, magnesium, manganese, copper, iron, molybdenum, niacin, and zinc. It's also incredibly high in antioxidants and, unlike flax, doesn't need to be ground up in order to access it's nutrients! So cool!
My favorite foodie blogger, Sarah Britton of My New Roots showed me the coolest characteristic of this little guy - its crazy binding qualities. When soaked in a bit of water it becomes a jelly-like substance and can do things like, replace eggs in baking recipes and act as a binder in your digestive system... yes. On that note, have you ever tried those delicious Kombucha drinks? They're my fave and have loads and loads of chia. Here's a little at home recipe that tastes just like the store bought treat and all its chewy goodness.
Chia Energy Drink
16 oz purified water
2 Tbsp chia
1 Tbsp organic apple cider vinegar
1 Emergen-C packet (for flavor, fizziness, and vitamins)
Fill your water bottle about halfway full and add the chia, apple cider vinegar, and Emergen-C powder. Fill up your bottle until it's about an inch or so from the cap. Gently shake your closed bottle to mix and let it stand for about 5-10 minutes to give the chia time to gel-ify. You can mix in more or less chia depending on your taste, I like it full of chia for an extra chewy extra nutritious drink! Enjoy!!
